In a large bowl add the softened butter and sweetener. Using a stand mixer with the paddle attachment or hand mixer, mix for 3-4 minutes until well combined and fluffy.


In a medium bowl, sift the dry ingredients including the flour, baking soda, salt, and cinnamon.


Add the flour mixture to the creamed butter, folding together until well combined. Fold in the rolled oats and raisins. Stir until well combined.


Cover cookie dough with plastic wrap and refrigerate for 30 minutes to chill. Preheat oven to 330F/ 170C. Line cookie sheet with parchment paper.


Place on the prepared baking sheet and flatten slightly with your hands. Make sure to leave some space between each cookie dough ball. Bake for 8-10 minutes, until lightly golden.
