INGREDIENTS

CHEESECAKE FILLING FOR COOKIES:

First, make the cream cheese filling. Using a hand mixer, beat the softened cream cheese and powdered sugar in a medium bowl until completely smooth and creamy, about 2 minutes.

FREEZE FILLING:

Scoop out tablespoons of the cream cheese mixture and roll into balls. Place the cream cheese balls in a single layer on a small baking sheet lined with parchment paper.

MAKE COOKIE DOUGH:

In a large bowl, using an electric mixer or in the bowl of a stand mixer with a paddle attachment, beat the butter and sugars together until light and fluffy, about 2 minutes.

ADD WET INGREDIENTS:

Add the egg, egg yolk, and vanilla extract and beat until fully incorporated and smooth.

MIX DRY INGREDIENTS:

In a small bowl, whisk together the flour, baking powder, and salt. Slowly mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
