Simple and Quick Lentil and Feta Salad

This simple and quick Lentil and Feta Salad  is so easy to make, it only took me a quick 20 minutes. It’s kid friendly and crowd friendly too – everyone in the family, including my kids, loved this salad!

If you’re using dried lentils, prepare them by adding one cup of lentils to 2 cups of water. Cover and simmer on low for 20 minutes.

Prepare the Lentils (if using dried):

Dice your cucumber, red onion, and bell pepper. Slice your grape tomatoes in half. Steam your corn.

Prep the Veggies:

Combine all of the ingredients together in a bowl. Fold in the feta cheese, and top with lemon juice.

Make the Salad!

Add salt and pepper to taste, enjoy cold!

Season and Taste!

Don’t have lentils? Try white beans instead. Be sure to drain and rinse your beans if using canned.
