Pumpkin Burgers with Black Beans & Veggies
Combine black beans, pumpkin puree, flour, ground cumin, garlic powder, and chili and cayenne powder. Leave chunks of black beans.
You can also use a fork to mash the ingredients in a bowl.
Form the bean mixture into 2 patties. Coat skillet with oil and cook on med heat for 5-10 mins until each side is browned.
Serve on toasted whole wheat buns, with your favorite toppings like lettuce, tomato, and pepper jack cheese.
Make sure to use pumpkin puree, not pumpkin filling.
