This recipe is made in the Instant Pot and full of comforting vegetarian flavors.

COOK

Set the IP to to sauté & add oil, red onion, bell peppers, spinach, corn, chili powder, cumin, ancho chili powder, salt, and garlic. Cook for 5 minutes.

ADD TOMATOES

Next, add fire roasted tomatoes, tomato sauce, black beans, kidney beans, pasta, and vegetable broth. Stir.

PRESSURE COOK

 Secure lid onto Instant Pot and set to pressure cook/manual on high for 5 minutes.

ADD CHEESE

Use the quick release valve to release steam. Once pressure is released, open lid and stir in cheeses until melted and combined. Serve warm
