Powdered Peanut Butter Cookies

Preheat the oven to 340 degrees F / 170 C. Line a baking sheet with parchment paper and set aside. In a stand mixer, cream the softened butter and sugar.

Preheat Oven, Prep Butter:

When light and fluffy add the egg and vanilla extract and continue to whisk until well incorporated.

Add Egg:

Sift the remaining ingredients into the bowl with the creamed butter and egg mixture.

Add Dry Ingredients:

Stir the flour mixture with the egg mixture completely until a smooth dough forms.

Make PB Cookie Dough:

Scoop out tbsp size of cookie batter and roll into smooth balls.

Cookie dough can be prepared ahead of time, rolled into balls and either frozen for up to 3 months or kept in the fridge for up to 2 days before cooking.
