Combine all the ingredients, except the chocolate chips, in a high-speed blender and blend until smooth.

Blend Wet And Dry Ingredients:

Pour the thick batter into a large bowl and fold in the chocolate chips.

Add Chocolate Chips:

Let the batter rest for 10 minutes before using it. This lets the baking powder do its magic for fluffier pancakes.

Let Batter Rest:

Heat a frying pan or large skillet over medium heat and pour in a 1/4 cup of batter into the hot pan. Cook for 2 to 3 minutes until bubbles begin to form.

You can prepare this recipe without the chocolate chips however you may need to increase the maple syrup to ½ cup.
