Perfect Healthy Vegan Chocolate Truffles with dates

These delicious Vegan Chocolate Truffles with dates, cocoa, and peanut butter are the perfect healthy treat. They also have no added sugar and happen to be gluten free!

INGREDIENTS

– Sprouted Quinoa – Dry roasted peanuts – Pitted dates – Crunchy Peanut Butter – Chia Seeds – Unsweetened Cocoa Powder

Cook quinoa according to package directions. Cool slightly and set aside. Process peanuts and dates in food processor until coarsely ground.

Add 2 cups cooked quinoa, peanut butter, chia seeds and cocoa, pulsing just until combined.

Transfer mixture to a large bowl. Using a cookie scoop or tablespoon, scoop out individual portions and shape into 24 balls – rolling between the palm of your hands.

Place on a piece of parchment paper, or into candy cups / baking cups, if desired. Chill for 2 hours before serving.

Use a food processor to pulse and combine all the ingredients. A blender will not work for these.
