Preheat the oven to 350 degrees Fahrenheit. Line 2 large baking sheets with parchment paper. Set aside.

MIX WET INGREDIENTS:

In a large bowl using a hand mixer, add the butter and sugar and beat for 1-2 minutes, until light and creamy. Scrape down the sides and bottom of the bowl as needed.

With the mixer on low speed, beat the egg and vanilla extract into the butter mixture just until combined.

BEAT IN EGG:

Add the flour and baking powder and stir in with a rubber spatula until just combined and there are no lumps. Then, fold in chocolate chips until evenly distributed.

ADD THE DRY INGREDIENTS:

Using a small cookie scoop, scoop out the chocolate chip cookie dough and arrange the dough balls 3 in apart on the prepared baking sheets.
