How to make Healthy Orange Cranberry Muffins


Preheat the oven to 350F/ 170C. Line your muffin tin with muffin liners or spray with cooking spray. Mix together the almond milk and vinegar in a medium bowl.


In a large mixing bowl, add the flour mixture, sugar, baking powder, baking soda, and orange zest and whisk until well combined.


Add the remaining wet ingredients to the large bowl, including the buttermilk, vanilla extract, and vegetable oil. Stir until smooth. Do not over mix.


Spoon batter evenly among 12 paper liners and bake for 20 minutes, or until an inserted skewer or toothpick comes out clean.


Remove the gluten free orange cranberry muffins from the oven. Allow to cool in the muffin tin for 5 minutes, then remove to cool completely on a wire rack.
