This fall-friendly bread is filled with delicious pumpkin flavors that are healthy and plant-based.
Preheat oven to 400 F. Grease a small loaf pan with nonstick cooking spray. In a large bowl, beat together the pumpkin puree, brown sugar, applesauce, and oil until smooth and well combined.
In a medium mixing bowl, sift the flour, baking soda, baking powder, pumpkin pie spice, cinnamon and salt. Add the dry ingredients to the wet ingredients. Beat until mixed well
Pour batter into prepared loaf pan. Bake for 30 to 35 minutes, until a toothpick inserted into the center of the loaf comes out clean
Allow the bread to cool in the pan for 15 minutes, then remove from pan and allow to cool completely before serving.
