Low Carb Eggplant Parmesan

A low-carb and healthy eggplant parmesan that is easy and delicious!

Cooking Spray

4 tbsp shredded mozzarella

1/4 cup chopped basil


8 tbsp marinara

4 tbsp fresh parmesan cheese

salt and pepper

4 eggplant slices

Step 1

Spray eggplant slices with cooking spray. Sprinkle with salt and pepper. Bake for 15 minutes at 400 F.

Step 2

Top with marinara, parmesan, and mozzarella cheese. Bake an additional 8 minutes.

Step 3

Top with fresh basil before serving.
