Cilantro Lime Rice

With 4 simple ingredients, my rice cooker cilantro lime rice is an easy recipe to whip up any day of the week.

The refreshing burst of citrus and cilantro is enhanced with a touch of sea salt for a fragrant side dish that pairs well with nearly anything.

INGREDIENTS

Cook Rice:

I start by adding 2 cups of white rice, 3-4 teaspoons of lime juice, and 4 cups of water to my rice cooker.

Once the rice is ready, I open the lid to my rice cooker and gently fluff the rice with a fork. Top with chopped cilantro.

Fluff Rice:

Now, I gently combine the chopped cilantro and salt with the cooked lime rice.

Mix In Cilantro & Salt:

Serve alongside your favorite dishes!

I store leftover or meal prepped rice in an airtight container in the refrigerator for up to 5 days.
