Bring the water and sugar to a gentle simmer in a small saucepan, continue to heat until the sugar melts.

Simmer:

Remove from the heat and allow to cool for 5 minutes before whisking through the lemon juice and zest, if using.

Cool & Add Lemon:

Carefully fill popsicle molds with the mixture and insert the popsicle sticks into the center of each mold. Freeze the lemon pops for at least 12-24 hours.

Fill Molds:

Freshly squeezed lemon juice is best in this recipe, bottled lemon juice mayl leave a bitter taste.
