Preheat the oven to 350 degrees F / 180 C. Line a cookie sheet with parchment paper, set aside. Whisk together the flour, baking powder and lemon zest, set aside.

Add butter and sugar to the bowl of a stand mixer. Beat the butter and sugar until light and fluffy.

Add the lemon juice and egg, continue to beat until well incorporated.

Stir through the flour mixture and mix until a dough has formed.

Ensure the butter is at room temperature to make it easier to beat together and become light and fluffy.
