Sauté Veggies: In a large skillet, sauté the peppers and onions on medium high heat. Add the seasoning and cook for two more minutes. Remove from the heat and allow to cool.

Fill Tortillas: Spray a baking dish with nonstick spray then fill the tortillas. Lay the tortillas flat and spread a large spoonful of enchilada sauce down the center of each.
