Keto Enchiladas

If your heart sings for enchiladas, but you’re on a low carb diet – try this delicious keto enchiladas recipe! Sautéed peppers and onions get wrapped in low carb tortillas and topped with melty cheese for a quick and easy weeknight dinner.

In a large skillet, sauté the peppers and onions on medium high heat. Add the seasoning and cook for two more minutes. Remove from the heat and allow to cool.

Sauté Veggies:

Spray a baking dish with nonstick spray then fill the tortillas. Lay the tortillas flat and spread a large spoonful of no sugar enchilada sauce down the center of each.

Fill Tortillas:

Each tortilla and place them seam side down in a baking dish or casserole dish.

Roll up:

Top with the remaining enchilada sauce and the remaining cheese. Bake for 20 minutes. Let cool for 5 minutes after you take it out of the oven.
