Instant Pot Vegetarian Chili
Turn Instant Pot to sauté and add olive oil, bell peppers, garlic, & onion. Sauté for 2-3 mins.
Add beans, corn, tomatoes, chili powder, cumin, coriander, cocoa powder... (Next).
Close the Instant Pot & pressure cook on high for 4 minutes
(Continued) Garlic powder, crushed red pepper, soy sauce, salt, and paprika. Stir to combine.
Once pressure cooking is done, let it naturally release for 5 minutes, then quick release.
Serve warm with toppings of choice! Cheese, low fat sour cream or plain greek yogurt, diced tomatoes, green onions, or tortilla chips. Even avocado!
