Turn the Instant Pot to sauté mode – medium heat. Add the olive oil, chopped onions, garlic, and ginger. Sauté onion mixture for 3-4 minutes until slightly caramelized.
Add the red lentils, brown lentils, cauliflower, broccoli, water, salt, and coconut sugar. Cover the Instant Pot with the lid, and close the pressure valve.
Natural release, then open the Instant Pot and stir everything to combine. Top with fresh cilantro, green onions, and a squeeze of lemon juice before serving.
