Pinto Bean Casserole

INGREDIENTS

Saute THE VEGETABLES:

Begin by adding onion, bell peppers, and garlic to a large pan or 2-quart bean pot, along with a drizzle of olive oil or cooking spray. Sauté until translucent.

Add The Beans And Spices:

Next, stir in the pinto beans, diced tomatoes, corn, baby spinach, and all the spices – from chili powder to black pepper.

Stir In Quinoa:

Stir the quinoa in the pan and let it cook with the rest of the ingredients.

Squeeze Lime And Mix: 

Squeeze fresh lime juice over the casserole and stir well to combine all the flavors.

Serve warm:

Finally, serve this healthy pinto bean casserole warm. Top it off with slices of avocado, a sprinkling of cilantro, and a dollop of Greek yogurt.
