Black Bean Mexican Flautas

COOK ONIONS

Heat oil in a large skillet. Cook the diced onions for 3-5 minutes. Add the garlic and cook one extra minute. 

ADD BEANS

Next, add the beans, spices, and one cup of water to the pan. Mix together. 

SIMMER

Reduce the heat to low and simmer the beans for ten minutes until the liquid is gone. 

MASH

Remove the beans from heat when a little bit of liquid remains. Mash the beans while leaving some beans whole. 

ADD CORN

Add the corn, salsa, salt, and pepper. Allow the mixture to cool. 

ASSEMBLE

Preheat the oven to 425°F. Coat 2 large baking sheets with cooking spray. Spoon 1/3 cup black bean mixture down center of tortilla. 

ROLL

Roll tortilla around filling, and secure closed with toothpick. Set on prepared baking sheet. Repeat with remaining tortillas and black bean mixture. Bake in the oven for 6-10 minutes until desired crispiness. 

SERVE

Top the Mexican flautas with cilantro and salsa. Serve warm!
