Heat a little olive oil in a cast iron pan over medium heat and add the onion, garlic and zucchini. Sauté veggies with a cook time of about 4-5 minutes until lightly brown.

Add chopped tomatoes to the courgette mixture. Cook for another 2 minutes.

In a large bowl beat the eggs and season with a little bit of salt and black pepper.
