Healthy Vegan Baked Oatmeal For Breakfast

Preheat the oven to 375 degrees Fahrenheit. Spray an 8 x 8-inch baking dish with nonstick cooking spray. In a large bowl, combine the ground chia seeds and water. Let it sit for 5 minutes to thicken.

Whisk the almond milk, vanilla extract, maple syrup, and applesauce into the chia seed mixture.

Add the rolled oats, baking powder, cinnamon, and one cup of blueberries. Gently fold into the liquid ingredients to combine.

Pour the oat mixture into the prepared baking dish and top with the remaining blueberries.

Bake the oatmeal in the preheated oven for 35 to 40 minutes, or until an inserted toothpick comes out clean. Carefully remove the dish from the oven and let the baked oatmeal cool for 20 minutes.

Instead of berries, use ripe banana slices and walnuts to create a banana bread flavor. You can also add some natural peanut butter for a PB&B feel!
