Combine Ingredients

First, place the coconut oil, white sugar, cocoa powder, cashew butter, and almond milk in a medium saucepan. Stir to combine.
Melt Ingredients

Next, bring the ingredients over medium heat to dissolve the oil and sugar. Stir with a spatula. Remove from heat & stir in the vanilla.
Add Oats

Next, add the oats and coconut. Stir to combine making sure every oat is covered.

Baking Sheet

Next, prepare a baking sheet with parchment paper. Scoop out the cookies and drop on the paper. Spread into cookie shape with back of spoon. Allow to cool for 30 minutes.
