Indian Fried Rice or "Khichdi"

Rinse the mixture of rice, moong dal (lentils), and quinoa until the water runs clear.

Sauté the onion, garlic, & ginger in 1 tbsp olive oil. Chop the veggies. Combine all the ingredients (grains + lentils + vegetables + onion mixture) in a large pot, then add the masala

Bring everything to a boil, & then reduce to a simmer. Cook for 20-30 minutes until all the water has been absorbed.

Serve with cilantro or yogurt if you'd like!
