Healthy Homemade Vegan Pop Tarts

First, preheat the oven to 338 degrees Fahrenheit. Line a baking tray with a piece of parchment paper. Set aside. Next, in a medium mixing bowl, mix the flour and baking powder. Set aside.

Mix the Dry Ingredients

In a small mixing bowl, mix together the applesauce, oil, and vanilla extract until smooth.

Wet Ingredients:

Add the apple sauce mixture to the dry ingredients and mix to form a dough. Add a couple teaspoons of ice-cold water to the dough if it is a bit dry.

Combine Wet + Dry:

Shape into a ball of dough, cover with plastic wrap, and allow it to rest in the refrigerator for about 15 minutes.

Chill the dough:

Roll the Dough:

After resting, cut the dough ball in half. Place one half of the dough onto a sheet of baking paper, cover with another sheet of baking paper, and, with a rolling pin, roll dough out to ⅛-inch thick.

Unglazed, cooked pop tarts can be frozen. Wrap them in plastic wrap and freeze for up to 2 months.
