Healthy Falafel Wrap Recipe

Preheat oven to 375°F. Place chickpeas, red onion, fresh parsley, whole wheat flour, chopped garlic,, fresh cilantro,  (next page)

ground cumin, salt, lemon juice, paprika, black pepper, baby spinach, & diced tomatoes in food processor. Give them a nice chop.

Transfer into a bowl, add the baking powder, & stir together. Mash any chunks with a potato masher. Texture should be slightly chunky.

Spray a baking sheet with nonstick spray. One at a time, take spoonfuls of mixture in your hands & form 15 balls, each about the size of a ping pong ball, and gently place them on the baking sheet. Spray them with olive oil spray.

You can also cook these in the air fryer! Place the oiled falafel in the air fryer at 350° F for 8 mins. Flip & air fry for another 6 miins on the second side.

Bake in the oven for 15 mins.

combine 2 parts hummus to 1 part water, & stir until blended (add more water to taste depending on how thin you like your sauce). Season to taste with salt / black pepper and chill until ready to serve.

While falafel patties are cooking, chop veggies and warm the pita bread.

Remove baking sheet from the oven, and carefully turn each ball over, gently reshaping if the bottoms have flattened.

Return to the oven and bake for an additional 10 to 15 mins.

Cut the whole pitas into halves, fill with spinach, 3 falafel balls, diced tomato, and top with spinach and sauce. Enjoy!
