Healthy Black Bean Flautas

Packed with flavor, these Mexican flautas are easy to make and kid-friendly.

2 tsp olive oil

12 corn tortillas

Ingredients:

Corn

1 red onion

taco seasoning

30 oz Black Beans

1/4 cup fresh chopped cilantro

5 cloves of garlic

40 minutes

Step 1

Sauté onions in olive oil for 3 minutes or until translucent.

Step 2

Stir in beans, chili powder, and water.

Step 3

Reduce heat to low and simmer until most of the liquid has evaporated.

Step 4

Mash beans until mixture is thick and chunky.

Step 5

Stir in corn, salsa, salt, and pepper.

Step 6

Preheat oven to 400 F. Spoon 1/3 cup of mixture into each tortilla. Wrap together using a toothpick to hold in place.

Step 7

Set on prepared baking sheet. Bake for 6-8 minutes or until tortillas are crispy.

Step 8

Top with a bit of cheese, salsa, and chopped cilantro.
