n a bowl mix melted butter with brown sugar.

Add eggs, water or milk, vanilla extract and spices and beat to combine.

Mix in apple cider and add whole wheat flour and baking powder.

Mix until everything is well incorporated and there are no lumps left.

Heat a skillet over medium heat. Grease the surface. Pour around ⅓ cup of batter and cook for 2 mins or until bubbles form on top. Flip pancake and cook for 1 more minute. Remove from skillet and repeat the process with the rest of the batter.

While the pancakes are cooking make the topping. In a small pot over medium heat mix apples with apple cider, maple syrup, vanilla and cinnamon. Cook for 8 minutes or until apples are soft.

Top the pancakes with the cooked apples.
