How to make Banana Oatmeal Cookies with Peanut Butter


Preheat oven to 350 degrees. In a large bowl combine flaxseed and water and let rest for at least 5 minutes to achieve an “eggy” texture.


Pour the cookie mixture into a bowl, and add the rest of the ingredients and mix well. The mixture will be thick and should stick together easily. Refrigerate for 5 minutes to harden.


Drop the banana oatmeal cookie dough by spoonfuls (I used a small ice cream scoop) on a lightly greased baking sheet or one lined with parchment paper.Press them out a little to expand (they won’t expand in the oven).


Bake for 15-17 minutes or until the cookies are slightly golden brown. Once the cookies are done, let them rest for a few minutes before serving.
