Preheat oven to 350°F. Lightly grease an 4.5 by 9 inch loaf pan with olive oil spray and set aside.

To the wet ingredients, add the yogurt and coconut oil.

Whisk in the coconut sugar, maple syrup, and vanilla.

Sprinkle the baking soda, cinnamon, and salt over the top, then stir until combined.

Allow the banana bread batter to rest for 10 minutes after you create it (this will contribute to a moister, fluffier banana bread!)
