Preheat oven to 350 degrees and grease a 9×13 baking dish with nonstick cooking spray. In a medium bowl, toss the apples with cinnamon, nutmeg, lemon, salt, and cornstarch. Add one tablespoon of the sugar to the apples. Toss to coat.

BLEND OATS

Pour 1 ¼ cups of old fashioned oats into a blender and blend until finely ground.

COMBINE SUGAR

Add the blended flour to bowl and mix with remaining oats, brown sugar, baking powder, vanilla extract, nuts, and melted coconut oil.

STIR IN APPLES

Add the apples to the baking dish and top with the oat mixture.

BAKE

Bake in the preheated oven for 40 minutes. Allow it to cool slightly before serving.
