PREHEAT

Preheat oven to 350*F. Line two cake pans with greased parchment paper. Whisk together the flour, sugar, baking powder, baking soda and salt. In a separate bowl mix together the oil, vanilla extract and buttermilk.

COMBINE

Next, come the flour and mix mixtures together but do not over mix. 

TRANSFER TO PAN

Transfer the cake batter among the two pans. Be sure to make sure they are even. 

BAKE

Bake the cake for 30-45 minutes until fully cooked through. Cool before frosting. Level off each cake half.

MAKE FROSTING

Place the chilled thick coconut cream (discard any coconut water), vanilla and sugar into a mixing bowl and whip with a stand mixer, or electric hand mixer, until thick and fluffy. –

PREPARE ICING

Separate the icing into different containers for different colors. Start off by using the white frosting.

PIPE FROSTING

Using the pink icing, pipe around the base of the cake.

MAKE THE SNOWMAN

Next pipe the snowman’s hat and small flowers around the side of the cake. Next pipe the eyes and mouth with the brown icing.

MAKE THE CARROT NOSE

Add a “carrot” nose and finish off any final details. Store in the fridge two hours prior to serving.
