First, preheat the oven to 375 degrees Fahrenheit. In the Dutch oven or heavy pan, heat the oil. Add the onions and cook for about five minutes. Next, add the garlic.

After that, add the cumin, coriander, paprika, cayenne and salt, and cook for 1 minute.

Then, add the canned chickpeas and 1.5 cups broth. Bring mixture to a boil. Place a lid on the dutch oven and bake the chickpeas in the preheated oven.

Meanwhile, dice the vegetables. Next, toss with olive oil, salt, pepper, and lemon juice.
