In a large bowl, whisk together the dry ingredients. Add chocolate chips to the mixture if desired!
In a small bowl, whisk together the eggs, milk, peanut butter & vanilla extract until smooth
Fold the wet into the dry ingredients. Try not to overmix the muffin batter!
Now evenly divide the batter among the muffin pan into the prepared muffin cups.
Bake for 20 minutes Serve these treats either warm or at room temperature.
Be sure to let the muffins cool before storing or else they will create moisture & get mushy. First let them cool in the tin before transferring to a wire rack – this will prevent them from breaking.
