Preheat your oven to 350 degrees Fahrenheit. Line an 8 by 8 inch square cake pan with parchment paper and set aside. Whisk the almond milk and lemon juice together in a medium bowl, then set it aside.

Preheat Oven:

In a large bowl, whisk the coconut sugar, salt, baking powder, baking soda, cocoa powder, and flour until well combined.

Combine Dry Ingredients:

Add the vanilla and eggs to the almond milk mixture and whisk.

Combine Wet Ingredients:

Pour the egg mixture into the flour mixture along with 1/2 cup of chopped walnuts and mix until combined.

Mix Wet & Dry:

In a separate bowl, mix the boiling water and instant coffee. Stir the hot coffee mixture into the cake batter.

Always check to make sure the cake is cooked through by inserting a skewer into the center, when it comes out clean it is cooked.
