Super simple red velvet cake mix cookies require only 4 ingredients! They’re light and fudgy and dotted with white chocolate chips. You can even drizzle some blue icing on top for a red, white, and blue Fourth of July treat!

How to make Red Velvet Cake Mix Cookies

Preheat the oven to 350F/180C and line a baking tray with parchment paper. Set aside. Add all ingredients to a large mixing bowl to make your cake mix cookie dough.

Stir, by hand, until well combined. You could also use a stand mixer but it’s not necessary if you don’t have one!

Using a cookie scoop, scoop the red velvet cookie mix into 1 inch balls on the prepared baking sheet. Place the unbaked cookie dough balls into the oven on the center wire rack, and bake for 10 minutes.

Remove and allow these easy cake mix cookies to cool on a cooling rack. When cool, dust with powdered sugar if desired, or top with cream cheese frosting!
