CHOCOLATE CHIP COOKIES WITHOUT BROWN SUGAR

PREHEAT OVEN

First, preheat the oven to 350°F. Line two large baking sheets with parchment paper. Set aside. In a large bowl using a hand mixer (or in the bowl of a stand mixer), add the butter and sugar and beat for 1-2 minutes, until light and creamy.

ADD EGGS

With the mixer on low speed, beat in the egg and vanilla extract just until combined.

Add the flour and baking powder and stir in with a rubber spatula until just combined. Fold in chocolate chips until evenly distributed.

TRANSFER TO PAN

Using a two tablespoons cookie scoop, scoop out the cookie dough and arrange the dough balls 3 in apart on the prepared baking sheets. You will get 16-20 cookies.

BAKE

Bake for 11 to 14 minutes, until the sides are lightly browned.

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
