Chipotle Copycat Sofritas

Place chili powder, paprika, cumin, oregano, garlic, salt, coconut sugar, onion, bell pepper, tomato paste, salsa, chipotle pepper, & adobo sauce in a blender.

Press and drain tofu for 15 minutes to get rid of excess water.

Heat 1 tbsp oil in a skillet over medium heat. Add the tofu & crumble it using a wooden spoon.

Cook until golden brown and crispy.

If using black beans, add them to the mixture.

Once the tofu is cooked (about 8-10 min), pour the Sofritas sauce into the skillet & cook on medium/low. Heat for 10-12 mins.

Serve warm with lettuce, cilantro, tomatoes, onion, and so much more.
