This copycat Chipotle vegan sofritas recipe tastes even better than the original recipe!
It’s flavorful and fresh, and is also much better for you thanks to less oil, less sodium and less sugar than the Chipotle version!
Press and drain the tofu for 15 minutes to get rid of the excess liquid. Saute the onion and pepper in 1 tsp olive oil until caramelized. Add your sauce ingredients to a blender.
Blend all of the sauce ingredients until smooth.
Heat olive oil in a large skillet over medium to medium-high heat. Add the block of tofu and crumble it into small pieces using a wooden spoon.
Pour the sauce into the skillet and stir until combined. Cook on medium/low heat until the flavors combine about 5-10 minutes.
Serve warm, on its own topped with fresh cilantro and lime, with a side of rice, or using our serving suggestions below! Enjoy!
