Roughly dice the washed and pitted cherries, and set them aside in a bowl for later.
Place the milk, vanilla, egg, butter, flour, sugar, baking powder, cinnamon, and salt into a high-speed blender or food processor.
Blend until a smooth batter has formed. Scrape down the sides several times to ensure all of the batter ingredients have been combined.
Transfer the batter to a large bowl and stir through the diced cherries.
Heat the vegetable oil in a heavy saucepan or Dutch oven over medium-high heat. The pot should have high sides to catch any oil splashes.
