Black Bean Tostadas with Fresh Corn
Preheat broiler to 350°F.. Spray a baking sheet with cooking spray. Wrap the corn tortillas in a paper towel & warm for about 30 secs. Place tortillas in a single layer on baking sheet. Spray with oil.
Place tortillas under broiler and broil until crispy and brown.
Heat a large pan over med-high heat. Add olive oil, onions, garlic, & tomatoes to the pan. Cook for 2-3 mins, then reduce the to med heat. Let cook for 10 more mins.
Add zucchini and cook for 10-12 minutes.
Add corn, beans, oregano, pepper, & salt to taste (if needed). Cook black bean mixture 3-5 minutes.
Split zucchini, black bean & corn mixture among the tostada shells, top tortillas with 2-4 teaspoons salsa and no more than one to 2 tbsp of cheese.
