Black Bean Quesadillas
First, heat a pot or a large pan over medium heat. Add the oil, onion, bell pepper, poblano pepper, corn, jalapeño and garlic. Sauté for 5 minutes.
Heat the refried beans in a small pot. Add the taco seasoning. Once the veggies have cooked, add the cumin, chili powder & salt to taste.
Grate the pepper jack cheese and set aside.
Take the tortilla and slather half of the bean. mixture on one side. Top with veggies, then cheese.
Next, fold the quesadilla in half and spray a pan with oil spray. Continue cooking until the cheese is melted.
Cut into slices. Serve with guacamole and salsa.
