This simple and quick Lentil and Feta Salad is made with cucumbers, juicy grape tomatoes, red onion, corn, and bell pepper for a high protein, nutrient-packed salad hearty enough to make a meal!

How to make Feta Salad


Prepare the Lentils (if using dried): If you’re using dried lentils, prepare them by adding one cup of lentils to 2 cups of water. Cover and simmer on low for 20 minutes.


Prep the Veggies: Dice your cucumber, red onion, and bell pepper. Slice your grape tomatoes in half. Steam your corn.


Make the Salad! Combine all of the ingredients together in a bowl. Fold in the feta cheese, and top with lemon juice.


Season and Taste! Add salt and pepper to taste, enjoy cold!
