Baked Oats Without Banana

The oven should be preheated to 350 degrees F (180 C). Spray a 8×8 baking dish with spray oil.

Preheat Oven, Whisk Wet Ingredients:

Add remaining ingredients and stir the oatmeal mixture until combined.

Combine Wet Ingredients:

Pour the oat mixture into the prepared baking dish and spread in an even layer.

Pour Into Baking Dish:

Bake in the oven for 30-35 minutes or until an inserted skewer comes out clean. Remove and allow the baked oatmeal to cool and set for at least 20 minutes before slicing and serving.

Bake & Cool:

Serve no banana baked oats warm or at room temperature, topped with whipped coconut cream, drizzle of maple syrup or toasted almonds.

To make this vegan friendly substitute the eggs for 2 flax eggs (2 tbsp ground flax seeds and 6 tbsp water mixed together to form a paste.)
