First, toast the bread. Next, slice the avocado and remove the pit. 

MASH AVOCADO

Scoop the avocado into a bowl. Season with salt and pepper, mash with a fork, and set aside. 

POACH EGG

Next, bring water to a boil in a pan and pour some vinegar into the water. 

COOK EGG

Crack 1 egg into a small cup. Using a spoon, swirl the water in the pot to form a whirlpool. Gently drop the egg into the center of the swirling water. Allow it to cook for 3-4 minutes without allowing the water to come to a boil.

ARRANGE TOAST

Spread avocado on two slices of toasted bread. Place sliced tomatoes on avocado, then top with eggs.

SEASON WITH FLAVOR

Serve the toast topped with a sprinkling of fresh cracked pepper and a sprinkle of fresh chopped chives.
