Apple Cake for the Health-Conscious (Gluten-Free)

This gluten-free apple cake makes an excellent breakfast bake or dessert! It’s topped with a cinnamon oat crumble, and packed with warm spices, and sweet apples.

Preheat the oven to 356F/ 180C. Peel, remove the core and slice the apples into thin slices. Set aside in a large bowl.

In a medium mixing bowl whisk together the flour, baking powder, 4 tbsp coconut sugar, eggs, almond milk and vanilla extract.

Heat a saucepan over medium heat. Add the apple slices, lemon juice, raisins, 1 tsp cinnamon, nutmeg, ¼ cup coconut sugar, and butter. Stir until the butter and sugar have melted and started to bubble.

Spray a 10-inch x 7inch baking dish, cake pan, or springform pan with cooking spray. Add the apple mixture and spread evenly over the base of the baking dish.

If you don’t need to make this gluten-free, you can use whole wheat flour instead fo the gluten free flour.
