THE PICKY EATER
Sauté the peppers, onions & garlic in a large drizzle of olive oil for about 5 mins, till soft & fragrant
Stir in the baby spinach & sauté another 3 minutes or so.
Add the tomato sauce & then seasonings to taste. Simmer on low for 10 minutes!
Boil your ravioli according to the package’s directions. Drain them & remove as much water as possible.
Dip a cooked, yet dry ravioli into the flour mixture in a shallow dish. Coat well on both sides!
In a medium bowl, whisk eggs. Dip the coated ravioli into the egg mixture letting the excess drip off.
In a 2nd bowl, mix the italian breadcrumbs, parmesan cheese & seasoning. Place ravioli into the breadcrumb mixture & coat well.
Place the breaded ravioli on the baking sheet until you have enough to fill the air fryer basket.
Air fry at 350 F for 8-9 minutes.
Enjoy with marinara sauce or ranch dressing on the side.
