Red Lentil Pasta Recipe

My healthy one pot red lentil pasta recipe is the ultimate easy vegetarian meal that is packed with protein, naturally gluten-free, and ready in just 30 minutes.

INGREDIENTS

Cook The Pasta & Veggies:

To begin, bring a large pot of water to a rolling boil, add the pasta, and cook it according to the package directions until slightly al dente.

Once cooked, purée the vegetable mixture with one jar of sauce in a blender.

Make The Sauce:

When ready, combine the cooked pasta with the sauce mixture and simmer for just a couple minutes until all the flavors meld.

After the dish is complete, top it with parmesan cheese, garnish with fresh herbs, and serve warm!
