Healthy Potato Salad

This healthy potato salad recipe is creamy, delicious, and so easy to make!

It requires minimal effort and simple ingredients, making it the perfect go-to recipe.

INGREDIENTS

Cook Potatoes:

Add the small red potatoes to a large saucepan or large pot. Cover with cold water and bring to a boil over high heat.

Allow the cooked potatoes to cool to room temperature. To speed up this step, you can also move them to the refrigerator.

Drain Potatoes And Cool

Prepare The Dressing:

While the potatoes are cooling, prepare the dressing by whisking the mayo, Greek yogurt, dijon mustard, salt and pepper and fresh dill in a small bowl until smooth.

Fold in the capers and diced celery.

Stir In Seasonings.

Dice the cooled potatoes. Place them into a large bowl along with the sliced green onions, reserving some to sprinkle on top.
